Club: Baked - Malted Waffles

So I'm slowly getting the hang of my new kitchen.  I was so used to my old kitchen.....I knew where everything was and totally had my routine down.  Now my kitchen layout is completely different, so I constantly have to stop and think about where things are.  I'll get there.....just have to keep baking!!

For this round of Club: Baked we're talking breakfast.  And one of my favorite kinds of breakfast.......waffles!  These are Malted Waffles, and their secret ingredient is malt powder.  They definitely give them a bit more flavor than your ordinary waffles....and the crunchy parts seemed a bit crunchier to me.  I let my second batch cook even longer, and I think they were even better......lots of crunch on the outside and tender on the inside.  They were a hit!  Even our 3 year old ate two of them!

TWD: Pecan Sticky Buns


For this round of Tuesdays with Dorie (Baking with Julia) we are tackling Pecan Sticky Buns.  These are not your ordinary sticky buns.......these have a brioche dough that comes out beautifully flaky and amazingly decadent.  I had never attempted a dough like this.....and to be honest, after reading through this recipe, I was quite intimidated.  However, although there were many steps, and you do need to start these well in advance of actually wanting to eat them.......none of the individual steps were very difficult.

Shall we talk about how much butter you're going to need to use for these?  Nah......let's not.  You'll enjoy them so much more if you don't know.  I know a lot of the Tuesdays with Dorie bakers cut out a lot of the butter.....but man.....they were sooooo worth the calories.  Let's face it, these are not something you're going to be eating everyday.......these are a special indulgence.

Glazed Doughnut Muffins



The taste of a glazed doughnut in muffin form (baked, not fried)?  Super delicious without all the guilt (ok, maybe a little guilt, just not as much as a doughnut)?  Sign me up!!

Look at these Glazed Doughnut Muffins from My Baking Addiction......they are so easy to throw together......and when they come out of the oven, the get a lovely sugary glaze-y bath.  Yum!

Coffee Cake Cookies


Have you ever made cookies to be served in the morning?  No?  Me neither.....well, except for my Pumpkin Cranberry Oat Cookies.  But when I saw this recipe for Coffee Cake Cookies from Bakers Royale.  I first saw the cookies on Pinterest and immediately pinned it.....what a great idea!!  And reading through the recipe......they have browned butter in them!!  Sold!!  I am truly obsessed with any recipe that has browned butter these days......so yummy......and so Fall-y to me!

Looking back at the pictures of this on Pinterest......I don't think I pressed down my streusel topping down into the cookie as much as the originals had.....but they were so good.....I don't think it mattered.  They really stay nice and cake-y......they don't get crispy like a cookie.  I took these to a friend's house for a party, and they were a hit!

Grandma's Apple Bread


Disclaimer:  This isn't my Grandma's apple bread recipe......though I wish it was!

We got a couple of Granny Smith apples in our CSA box that were more than a tad on the tart side.  I tried giving one to the boys, and they both wrinkled up their faces after one bite and wouldn't eat anymore.  So, I started digging around looking for something yummy to make with them.  I found this recipe for Grandma Barb's Apple Bread at A Farmgirl's Dabbles.  It's got grated apples, walnuts, and dried cranberries.....yum! This bread is insanely moist and tasty, and is great for breakfast or for an afternoon snack.  Plus, the recipe makes two loaves....one for you, and one to give away and make someone else happy!

Grilled Breakfast Pizza

Yep......I do make non-dessert-y food too!  The results are just usually not nearly as exciting as dessert for me :)  I get lots of healthy inspiration from my friend Susan over at Cooking Out of the Box.  She was inspired by the CSA box of produce she gets every week.....well inspired and had to figure out a way to make use of all of the fruit and veggies that she gets every week.  Now that I've decided to take the plunge and get back into the weekly CSA delivery, I'm going to be needing more and more of her recipes!  She's got a ton of great ideas and recipes for both fruits and veggies......check her out at Cooking Out of the Box!

You know you like eating breakfast for dinner, right?  And who doesn't love pizza (well.....my hubby has some issues with being a lactose-intolerant kind of guy).  What about combing the two, and because it's crazy hot out and you don't want to turn on your oven.....grilling up the whole sucker on your BBQ??  Sounds awesome, right?

I still have a bunch of bacon left over in the freezer from the  Bacon-of-the-Month Club membership that I got the hubby for Christmas (oh man, was that ever a great gift!), so I'm always on the lookout for new recipes that use one of our favorite things.  This pizza from Tasty Kitchen has bacon, eggs, mozzarella, parmesan, chives, parsley, and green onions.  It seriously is breakfast on a pizza!!

I had never actually tried grilling a pizza before, although I had seen it done, and it does look fantastic.  Well, let me tell you.......the crust comes out fantastic!  Seriously, it tastes so much like a wood-fired pizza.....so delicious!  I even made it easier for me and bought the pre-made Trader Joe's pizza dough.  Now I'm planning on trying all sorts of different kinds of pizzas on the grill......so glad I tried this.

Blueberry Boy Bait


It's blueberry season!!  After buying a couple of huge containers of blueberries, I had to start finding some recipes to use them in........and this one uses a whole 2 cups of blueberries......yeah!

According to Sticky Gooey Creamy Chewy, this is based on a recipe from the 50's that was entered in a Pillsbury baking competition.  The baker that submitted it claimed that one bite of this cake and the boys were hooked.  Well, I gotta say the hubby loved these!  

One goof-up I made in this one (and it's a pretty easy recipe, so I feel kind of silly).......I forgot to toss the blueberries with flour before folding them into the batter.  Because of that, most of my blueberries sank to the bottom while the cake was baking.  If I had remembered to do that step (my fault for trying to get this in the oven and get the boy's dinner on the table at the same time), then the blueberries would have been scattered throughout the cake, instead of being primarily on the bottom.  Oh well......at least the cake still tasted fantastic.....moist, buttery.....and with a yummy sugar-cinnamon topping.

The hubby and I had this for dessert last night.....fantastic with a little whipped cream!  Today I had a piece with my afternoon coffee.....a perfect pick-me-up!!

Morning Muffins......2 ways

I can't believe that the school year is almost done!!  Where did the year go???  My oldest is graduating preschool and moving on to Kindergarten!  He's been telling anyone who will listen that now that he's 5 he is ready for Kindergarten.....sigh......

Today was the last day the mommies at school got together to put on an activity for the kiddos.  So we had ourselves a little luau today, complete with the hula, limbo, digging for shells, and pineapple and punch!

One of my jobs today was to provide snacks for the mommies, so I decided to try out two muffin recipes that caught my fancy.  The first one is a streusel-topped blueberry muffin from Our Best Bites.  The hubby has declared that these are one of his favorite muffins ever!  I'm a sucker for anything with a streusel-y topping.....I just love it.....but in addition these have a zing and tang from lemon zest and buttermilk.

I also needed to have some chocolate.....I always need chocolate!  The day before I needed to decide what I was making, a recipe for triple chocolate muffins showed up in my inbox from Bake at 350.  Uh, seriously?  Triple chocolate.....I am sooo in!

The triple chocolate comes from dark cocoa powder, bittersweet chocolate chips, and semisweet chocolate chips.....some serious chocolate power!

I've got to say that I really loved these....but they are really really chocolate-y.  If you aren't a chocolate lover, like the hubby.....these probably won't be your absolute favorite....but you won't be able to deny that they're pretty darn tasty.  For a chocolate love like me, these are a perfect way to start the day!!

Honestly, you could probably just dust a little powdered sugar on the top of these , or add a little whipped cream, and call them a cupcake and serve for dessert.  Does anyone know the technical different between a muffin and cupcake?  Is it just the time of day that it's served?

Treats for Mommies

Usually when I'm making something sweet, I'm thinking of making both kids and their parents happy.....but there are times when I only have to worry about adults.......and those times tend to end up in a dessert with booze in it (there's nothing wrong with that right?). But in this case I needed to make something for breakfast/snack for my fellow Mommies at my oldest son's preschool......hmmm.....maybe too early for booze??

So in comes this recipe from my secret boyfriends (expect to see lots of their recipes).....Nutella Scones. I assume at this point everyone and their uncle knows what Nutella is......but just in case.......it's a chocolate/hazelnut spread, and according to their advertising is part of a healthy breakfast. I don't know about that part, but I do know it's delicious!! I remember having it for the first time when I was an exchange student in Germany in high school (I simply can't say the year because it was just too darn long ago!). My host family had a jar of Nutella on the breakfast table, and trying that for the first time on some amazing fresh baked bread......ahhhh...angels started singing :) Recently, I had been talking to some people about Nutella, and to my surprise, they hated it! Not just disliked it....but truly hated it! So, I guess Nutella is a love it or leave type ingredient.......that's why I also decided to make my favorite banana bread....for the Nutella haters.....or those who think chocolate at breakfast is a bad thing.

This was actually my first time making scones, and I found it to be a pretty easy recipe. I had to get used to the dough....it's a little different than doughs that I'm used to.....and I know that you do not want to knead the dough more than necessary so that the scones will come out tender. There is Nutella mixed into the dough as well as drizzled on top of the finished scones......so as long as you are a fan of Nutella, this is a recipe to try!

The recipe for these scones can be found in my secret boyfriends' latest cookbook, Baked Explorations. I also was able to find the recipe posted on the Baked Sundays blog (they do a recipe from the Baked Explorations cookbook every couple of weeks).


So to please the Nutella haters, I also decided to bust out my favorite banana bread recipe. It's a lowfat banana bread recipe that uses Greek yogurt. I've made this thing so many times that I've actually got the entire recipe memorized.....I don't think I can say that about any other baking recipe! I made it without walnuts this time (simply because I had run out).......I think I prefer it with walnuts, but it is still great without them.
